Ingredients for the sriracha honey sauce (sauces about 10 wings): Let's start with the homemade blue cheese dressing.
I love this recipe because it is simple and it lets you enjoy fresh blue cheese dressing without any preservatives or additives. Simply mix all the ingredients together in a bowl. For the best flavor allow the dressing to sit in the refrigerator for a few hours before eating.

Next, get your grill ready for the wings. I prefer the simple indirect then direct method of grilling. If you are unsure about grilling the wings check out my post on the easiest way to grill wings. Basically I like to start the wings over indirect heat until they are mostly cooked (about 20-30 min) and then move them over to the direct heat side of the grill. The time the wings spend over direct heat will crisp them up a bit and give them nice color.
While the wings are on the indirect side of the grill get the two ingredients and make the wing sauce: sriracha hot sauce and honey.
The recipe here is written for a small amount of wings, about 10 or so, so keep that in mind when you make this. Start off with 1/3 cup of honey and then 1/3 cup of sriracha hot sauce. Mix together well and taste it. Too hot? Add some more honey. Not hot enough? Add some more sriracha. Easy as that! If you are doing a lot more wings, scale up the sauce accordingly. For example, if you are grilling 30 wings do 1 cup of sriracha and 1 cup of honey. You can add some salt and pepper in there too, if you wish.
As you can see it is a pretty thin sauce. That's ok. It brushes easily on top of the wings.
When you are ready to move the wings over to the direct heat side of the grill grab a sauce brush. Move the wings right over the coals and lightly brush the sriracha honey wing sauce all over. Let the wings sit for a minute or so, then turn them over and sauce again. Repeat until the sauce is all used up. Brushing the sauce on the wings while they are still on the grill lets the sauce caramelize a bit. If you don't want to do this you can have the sauce in a big bowl and when the wings are done toss the wings in the bowl and mix them around until they are completely coated.
The sauce grills well. It sticks to the wings nicely and gives them a nice color.
Next cut some celery and get out that lovely homemade blue cheese dressing. There you have it. Pefect sriracha honey hot wings and homemade blue cheese dipping sauce.
