Simple Low Carb BBQ Sauce – Keto Friendly BBQ Sauce
3 ingredients: Melted butter, Salsa, and pureed chipotle peppers in adobo sauce.
Easy enough, right? Melt the butter in a small bowl in the microwave. I use Kerrygold salted grass fed butter and microwave it for bursts of 9 seconds at a time to avoid splatter.
This is what pureed chilis in adobo sauce looks like. It’s amazing. Smokey, spicy and so rich with flavor. It usually comes in a small can with full size peppers floating in the sauce. Dump it in a small food processor and puree. This stuff keeps in your fridge for a long time so I always have some on hand to give some pop to any meal that is lacking.
Mix the melted butter, the chilis in adobo puree and the salsa together. If your salsa is too chunky give it a spin in the food processor to smooth it out. The salsa I used didn’t have too many chunks of tomato and pepper so I left it alone.
Look how nice that looks! It’s full of rich and spicy flavor. Time to add it to the leftover smoked brisket.
Here’s the brisket prior to adding any of my simple low carb bbq sauce:
This sauce did the job. It gave an amazing spicy bbq sauce flavor without any added sugar. No need for a sweet sauce when it can be rich and spicy.
Clearly there is a bunch of flexibility here. If you want it hotter, add more chipotle puree. If you want it more tomato tasting, add more salsa. If you want it even hotter add some hot sauce in addition to the chipotle puree. You can’t really go wrong with smoked BBQ meat, melted butter, salsa and spicy chipotle peppers in adobo sauce. The perfect simple low carb BBQ sauce!
Nutritional Macro breakdown: 1 Tablespoon of La Costena Adobo Sauce is about 5 grams of carbs (3 g of fiber in that 5 grams total). Grass fed butter has minimal carbs. Salsa can vary wildly, so buy a salsa with very low sugar added. An average salsa has about 2-4 grams of carbs per serving which is about 2 tablespoons. Regardless, with the give or take nature of this recipe, you are looking at a half cup of low carb bbq sauce that is under 10 grams of carbohydrates which is absurdly low compared to a normal sweet bbq sauce that might contain 20 grams of carbs for just a couple of tablespoons.
