Made with avocado oil, Worcestershire sauce, black pepper, and BBQ rub, these ribs make the best dinner party appetizer or main dish.

Smoked Beef Short Ribs Recipe

Cooked (well, smoked) slow and low until they become fall off the bone tender and juicy.

I’m super excited about today’s recipe because, honestly, who doesn’t love ribs; especially when they are smoked until they fall right off the bone and melt in your mouth?

Whether you are making these ribs for Mother’s Day, Father’s Day, or just a casual Summer backyard BBQ, these ribs pack a ton of flavor will be the main event.

Ingredients for Smoked Beef Short Ribs

Meat: 3 lbs Beef Short Ribs

Marinade: 2 tbsp of avocado oil or olive oil and 2 tbsp Worcestershire sauce

Seasoning: 3 tbsp of coarse black pepper and 3 Tbsp of BBQ dry rub

How to Make Smoked Beef Short Ribs

Preheat the grill. Preheat the pellet grill to 225 degrees F.

Marinade. In a large mixing bowl whisk together avocado oil and Worcestershire sauce then add in your beef short ribs and massage the marinade into the meat. Let sit for 30 minutes or overnight.

Season. About 20 minutes before you are ready to cook remove the short ribs from the marinade and season with a heavy coat of black pepper and your favorite dry rub.

Cook the Ribs. Place the Short ribs in the pellet grill and smoke for 2 hours.

Continue Cooking. After two hours spray the ribs with a light coat of cooking spray then continue cooking for another 2 hours. By this point, the bones should be pulling away from the meat.

Add beer or beef stock and continue cooking. Transfer the ribs into a 8×10 foil pan and pour in 1 cup of beer or beef broth along with 2 tbsp Worcestershire sauce. Cover and place back on the pit to cook for another 2 hours at 275 degrees F.

Check for doneness. The short ribs are done when you can stick a probe thermometer into the thickest part of the short rib and pull it out without the rib moving or feeling any tension.

Serve. When done, plate, serve, and enjoy!!

Recipe Variations

Dry Rub: For this recipe, I used my favorite BBQ dry rub. However, if you are looking to use what you got or use your favorite that is fine too. My only word of advice, make sure you are using a dry rub.

Seasoning: Looking to add more seasoning to the mix? Consider trying garlic powder, onion powder, cayenne pepper, kosher salt, or even some brown sugar.

Wood Chips or Wood Chunks: When using a pellet grill, wood chips matter. Grab your favorite blend and toss them in!

What to Serve with Beef Short Ribs

No meal is complete without some killer side dishes like Sheet Pan Green Beans Almondine with Bacon, Corn and Avocado Summer Salad- Best Cookout Side Dishes, and Twice Baked Potato.

Don’t forget to serve up your meal with a side of BBQ sauce and red wine!

Leftover Short Ribs

I hate to break it to you, but you probably won’t have any. However, if you do or you are cooking to plan for leftovers, this is how you store them!

Grab your favorite airtight container and toss them in the fridge. Your leftover ribs will keep for about 4 days.

I don’t recommend freezing them, because I think they taste better fresh, but if you do plan on freezing them, take the meat off the bones, allow the meat to cool completely (reach room temperature), and then toss them in the freezer.

How to Reheat Beef Short Ribs

Reheating short ribs has never been easier! Place the leftover ribs in a covered pot on the stove for roughly 20 minutes or reheat them in the oven at 350F for about 15 minutes.

Helpful Kitchen Tools

Sharp Knife. The cooking process for these flavorful beef ribs leaves you with the best results – fall off the bone meat. However, if you are looking to cut it up, I recommend using a good knife.

Paper Towels. Whether it’s for cleaning up a mess or wiping your hands and face, these will come in handy.

Airtight Container. Grab a container for storing leftovers. Don’t have any containers? You can also use aluminum foil.
