CAST IRON CUBAN CASSEROLE – LEFTOVER PULLED PORK RECIPE

Turn your leftover pulled pork into a delicious low-carb Cuban Casserole. This healthy dinner is ready in no time using the leftovers out of your fridge.

Ingredients

-Cooked Pulled Pork -Heavy Cream -Shredded Swiss -Sliced Dill Pickles -Cream Cheese -Dijon Mustard -Ham

Step 1

Shred pork into bite-size pieces and simmer in a cast-iron skillet with cream cheese, Dijon, and heavy cream.

Step 2

Once the cream cheese has melted and mixed in with the pork add half of the sliced pickles. Continue to simmer until the sauce has thickened.

Step 3

Top the pork mixture with sliced ham, swiss cheese and remaining sliced pickles.

Step 4

Bake at 400 degrees F. for about 15-20 minutes until cheese is golden and bubbly.
