CAST IRON ROASTED NEW POTATOES

These cast iron roasted new potatoes are my favorite way to prepare  potatoes. They have beautiful crispy skin with a perfectly cooked creamy  center.

Ingredients

– New Potatoes – Butter – Avocado Oil – Real Salt – Onion – Garlic – Black Pepper

Wash potatoes then set on paper towels and pat dry. Place potatoes in a 12 inch cast iron skillet, add avocado oil, half stick of butter and half of the salt.

Step 1

Cook the potatoes over medium heat for  about 6-8 minutes turning occasionally until the skin of the potatoes begin to blister. Place skillet in the oven set to 450 degrees F.

Step 2

Roast for 20-25 minutes until potatoes are fully cooked. Poke with a paring knife to check for doneness.

Step 3

Remove potatoes from the oven and add remaining butter and seasoning. Garnish with fresh scallions.
