Easy Blackberry Baked Oatmeal

Whether you enjoy it for breakfast or dessert, this easy Blackberry Baked Oatmeal will have you coming back for more!

Ingredients

– 2 cups Steel Cut Oats – ¼ cup Brown Sugar – 2 tbsp Honey – 1.5 tsp Baking Powder – 2 tsp Vanilla Extract – 1 tsp Cinnamon ground – ¼ tsp Nutmeg ground

Step 1

Preheat the oven to 350 degrees F. (175 C.)

Step 2

Combine all ingredients except blackberries in a large mixing bowl and fold them together using a spatula. Gently fold half of the blackberries into the oat mixture.

Step 3

Scoop the oat mixture into 6 oz greased ramekins and top each ramekin with a few blackberries. Drizzle a few drops of additional honey on top if desired and bake for about 25-30 minutes.

Step 4

Let the ramekins cool for 5 minutes before serving. If you aren’t going to serve them right away and want to enjoy them later, let them cool completely and cover them before refrigerating.
