Easy Mediterranean Coleslaw with Blood Orange Vinaigrette

This simple, yet beautiful and healthy slaw is a side dish that can be prepared all year round.

- White Cabbage - Kale - Radishes - Goat Cheese - Scallions - Olive Oil - Red Wine Vinegar - Blood Oranges - Whole Grain Mustard

Ingredients

Step 1

Prepare the dressing by chopping herbs and combining all the ingredients except the olive oil in a large bowl.

Step 2

Then slowly drizzle in the oil while whisking vigorously until the vinaigrette has thickened.

Step 3

Refrigerate for 30 minutes.

Step 4

To prepare the salad combine chopped kale, shredded cabbage, radishes and scallions in a large bowl drizzle over desired amount of blood orange vinaigrette (about ⅓ cup) and toss to coat.
