Grilled Chicken Bacon Ranch Panini

I have never grilled a panini on the charcoal grill before. My grocery store sells some incredible ciabatta rolls so I picked one up, grilled some chicken and went for it.

- Ciabatta bread - Chicken - Bacon - Ranch dressing - Colby jack cheese - Tomato - Red pepper

Ingredients

Step 1

I prepared a medium  high heat and tossed the chicken right over direct heat. After significantly browning both sides of the chicken I butterflied them and then laid them on the grill split side down.

Step 2

When the internal temperature was over 165F I took the chicken off, let it rest for a few minutes, and then diced it up.

Step 3

Once the chicken  breast was diced, the fries were cooked, & the red pepper was roasted, I diced up the roasted red pepper, sliced the ciabatta bread & brought all the ingredients back to the grill for panini assembly.
