MEDITERRANEAN COLESLAW WITH BLOOD ORANGE VINAIGRETTE

Made with a handful of fresh ingredients, this recipe is great to enjoy all year long with lamb, spiral ham or any dish that needs a tangy delicious side dish.

Ingredients

– White Cabbage Shredded – Chopped Kale – Radishes – Goat Cheese – Scallions – Olive Oil – Red Wine Vinegar

Prepare the dressing by chopping herbs and combining all the ingredients except the olive oil in a large bowl.

Step 1

Then slowly drizzle in the oil while whisking vigorously until the vinaigrette has thickened. Refrigerate for 30 minutes.

Step 2

To prepare the salad combine chopped kale, shredded cabbage, radishes and scallions in a large bowl.

Step 3

Drizzle over desired amount of blood orange vinaigrette (about ⅓ cup) and toss to coat. Top with crumbled goat cheese and serve.
