Leftover Corned Beef Crescent Rings

This corned beef Reuben Crescent Roll appetizer is an easy appetizer to bake and a great way to repurpose those St. Patrick's Day leftovers.

  • Preheat the oven to 400 Degrees F
  • Cube up leftover corned beef and pulse in a food processor until chopped up evenly. or use a knife and chop by hand
  • Place a sheet of parchment paper on a sheet pan and place a 3 inch bowl in the center. Open up the crescent rolls and place the wide end next to the bowl with the points out to look like a sun or starfish.
  • Once the crescent rolls are fanned out around the bowl spread out a layer of Swiss cheese, followed by corned beef, saurkraut and another layer of Swiss.
  • remove the bowl from the center then take the points of the crescent rolls and fold them over the filling. Press the edges and form the ring.
  • Spray with cooking spray or butter on the crescent rolls and sprinkle on the caraway seeds. Bake for 15 minutes until golden brown then place the bowl back in the center of the ring and fill with thousand island dressing for dipping.
