Left Over Pulled Pork Cuban Casserole

Turn your leftover pulled pork into a delicious low carb Cuban Casserole. This healthy dinner is ready in no time using the leftovers out of your fridge.

Equipment

  • 12" Cast Iron Skillet

Ingredients

  • 2 lbs Cooked Pulled Pork
  • ¾ Cup Heavy Cream
  • 1 Cup Shredded Swiss
  • 5 oz Sliced Dill Pickles
  • 4 oz Cream Cheese
  • 3 tbsp Dijon Mustard or Yellow Mustard if you prefer
  • 6 oz Thinly sliced Ham or Canadian Bacon

Instructions

  • Shred pork into bite size pieces and simmer in a cast iron skillet with cream cheese, Dijon and heavy cream


  • Once the cream cheese has melted and mixed in with the pork add half of the sliced pickles. Continue to simmer until sauce has thickened.


  • Top the pork mixture with sliced ham, Swiss cheese and remaining sliced pickles


  • Bake at 400 degrees F for about 15-20 minutes until cheese is golden and bubbly.

Portion size will vary. I recommend about a 6-8oz portion per serving.
