Grilled Shrimp with a Coconut Milk Marinade

A tasty and unique grilled shrimp marinade. Recipe by Steven Raichlen.

Cook Time 10 minutes

Ingredients

  • About 1.5 lbs of shrimp
  • 1 large onion
  • 2 jalapeno peppers
  • 1 small green pepper and 1 small red pepper
  • ¼ tsp ground ginger
  • 6 cloves of garlic
  • 14 oz coconut milk in a can
  • 3 T lime juice
  • 2 T olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • cup of chopped cilantro
  • melted butter for brushing on the shrimp

Instructions

  • Add all of the marinade ingredients to a food processor.
  • Pulse until it becomes a rough chopped mix.
  • Pour over top of shrimp.
  • Place in the refrigerator for a few hours.
  • Grill.
