  • In a saucepan add butter, brown sugar, honey and hot sauce whisking until butter is completely melted. Use a stick blender to emulsify the sauce until it thickens and becomes bright orange
  • Whisk in (do not blend) your garlic and parmesan and remove from heat. Set aside
  • Season wings to your liking and then toss with 2 tsp baking powder to help crisp the skin. Grill for about 30-45 minutes over indirect heat until wings reach an internal temperature of about 185 degrees F.
  • Pour a generous amount of the garlic parmesan sauce over the wings and toss to coat. Serve with celery and bleu cheese or ranch.

Notes

You will have extra sauce, Probably enough for 10 lbs of wings or 4-5 batches of this recipe.
