Grilled Shrimp with a Coconut Milk Marinade
A tasty and unique grilled shrimp marinade. Recipe by Steven Raichlen.
Prep Time 1 hour hour 15 minutes minutes Cook Time 10 minutes minutes
- About 1.5 lbs of shrimp
- 1 large onion
- 2 jalapeno peppers
- 1 small green pepper and 1 small red pepper
- 1/4 tsp ground ginger
- 6 cloves of garlic
- 14 oz coconut milk in a can
- 3 T lime juice
- 2 T olive oil
- 1 tsp salt
- 1 tsp pepper
- 1/3 cup of chopped cilantro
- melted butter for brushing on the shrimp
Add all of the marinade ingredients to a food processor.
Pulse until it becomes a rough chopped mix.
Pour over top of shrimp.
Place in the refrigerator for a few hours.
Grill.
