These Smoked Spam Fries are a simple appetizer that go great with a cold beverage. The Salty and spicy flavor combination of the spam fries are incredibly addictive.
Toss spam fries in a bowl along with sriracha and bbq dry rub. Transfer spam fries to a wire rack and lay them out with about 1/2 inch space between each fry.
Smoke for about 1 hour at 300 degrees F until the spam fries have developed a crust.
To prepare the Creamy Sriracha Sauce simply whisk together Mayo, Sriracha, soy sauce, lime and honey.
Serve immediately with dipping sauce on the side.

Serving Size about 6 Fries with 2 tbsp of dipping sauce.Spam Fries are best to be eaten immediately, they don't reheat well and I see no point in freezing them.
