Break down Turkey into eight pieces and let chill uncovered in the fridge overnight or for at least a few hours. This will dry out the skin to help it get crispy when it roasts.
Season the turkey on all sides with avocado oil and dry rub. Place on a sheet pan with an elevated rack.
Combine the dry seasonings in a heat-safe bowl and heat oil to 275 degrees F. Pour the hot oil over the seasonings and whisk.
Inject each piece of turkey with Nashville sauce. Cook the dark meat for about 2 hours until the drumsticks and thighs reach an internal temperature of 195-200 degrees F. then roast the breast at 350 degrees F. for about 90 minutes until they are 165 degrees F.
Let rest for 5 minutes, and brush on Nashville hot sauce. Slice up the turkey breast into 1/4-inch slices. Serve with pickles

Cooking the turkey breast and dark meat separately will give you juicy white meat and tender dark meat.You can put the dark meat in about 30 minutes before the breasts.
