Slice peaches in half and remove the pit. Then cut each peach into about 8 slices. Wrap each slice with a 1/2 slice of prosciutto.
Set grill temperature to about 400-450 degrees F. Grill the peaches fpr about 2 minutes per side just until the prosciutto tightens up around the sliced peach.
Once the peaches are grilled set them aside and grill your crustini brushed with olive oil until golden.
Just before serving toss arugula in a bowl with olive oil, balsamic vinegar, slat and pepper. Spead the arugula out on a large plate and place burrata in the center then arange your grilled prosciutto wrapped peaches and crustini around the cheese.
