Burrata and Prosciutto Wrapped Peaches
As summer comes to an end, you may be looking for new recipes that help soak in those last moments of summer.
These burrata and prosciutto wrapped peaches are a perfect, light appetizer to close out summer with.
For this appetizer, I served these peaches with a toasted baguette and served them over an arugula salad.
This dish will certainly hit all of your taste buds with a perfect balance of taste and flavor.
The salty prosciutto mixed with the sweet, juicy peaches is a taste you didn’t know you needed to try.
Combine that with the creamy burrata and tart balsamic and you have made a great balance of different flavors.

What Is Bruschetta (And How Do You Say It?)
Bruschetta is a popular Italian appetizer. There are many different forms and variations of bruschetta too.
The classic or most common form involves toasted bread or baguette with garlic and olive oil. Then it is normally topped with diced tomatoes and sometimes balsamic vinegar and fresh basil.
The version we are making in our appetizer recipe is obviously a little bit different.
But there are many variations to bruschetta that are all great for a nice Summer day.
They all incorporate some form of toasted bread and are almost like a tiny pizza.
All this talk about bruschetta and you’re probably wondering if you’re pronouncing it correctly.
Actually, most people in America pronounce it wrong by pronouncing it brew- shet- uh.
The correct pronunciation is actually brew-skeh-tuh if you want to sound like a proper Italian.

Can Burrata and Prosciutto Wrapped Peaches be Made in Advance?
For the most part, no it can’t be.
If you make it in advance and put it in the fridge, the prosciutto crostini will get soggy.
You want this dish to be served crunchy, so this would be nasty.
However, you can prep the peaches in advance to get them ready and save time the day you do decide to make it.
Whatever you do, just don’t make the whole thing and put it in the fridge to be served at a later date!

Ingredients
6 oz burrata cheese
4 peaches
4 oz prosciutto
3 cups arugula
2 tbsp olive oil
½ tsp sea salt
½ tsp black pepper fresh cracked
1 baguette (sliced and toasted)

How to Make Burrata and Prosciutto Wrapped Peaches
Instructions
- Slice peaches in half and remove the pit. Then cut each peach into about 8 slices. Wrap each slice with a ½ slice of prosciutto.
- Set grill temperature to about 400-450 degrees F. Grill the peaches fpr about 2 minutes per side just until the prosciutto tightens up around the sliced peach.
- Once the peaches are grilled set them aside and grill your crustini brushed with olive oil until golden.
- Just before serving toss peppery arugula in a bowl with olive oil, balsamic vinegar, slat and pepper. Spead the arugula out on a large plate and place burrata in the center then arange your grilled prosciutto wrapped peaches and crustini around the cheese.

How to Serve Burrata and Prosciutto Wrapped Peaches
Depending on the look and style you are going for, there are many different ways you can serve this appetizer.
Since I am making this in the summertime, I want the easy appetizer to have a summer feel to it.
I prepared this appetizer by starting with a medium bowl. I covered the bottom of it with baby arugula.
Next, I placed the toasted baguette slices and wrapped peaches around the outside. In the middle I had the creamy burrata cheese placed in the middle.
I went with burrata cheese for my recipe but you can certainly mix and match your favorite cheeses.
Mozzarella cheese and parmesan cheese also work well.
Lastly, I topped the peaches with balsamic vinegar to add even more taste.

Tips and Tricks or Questions You May Have
How to wrap the peaches?
- The prosciutto should stick to itself
- If it doesn’t, use a toothpick. Just don’t stick it through the other end of the peach
Other ways to eat it or pair it with?
- On your salad with your favorite salad dressing, lemon juice, Balsamic glaze or a drizzle of honey
- As a side to a nice meal on the grill
