Set up the grill or smoker for dual zone cooking with all the coals on one side. Aim for a pit temp of around 300-325 degrees F.
Season the Country ribs liberally on all sides with your favorite bbq dry rub then let sit for about 20-30 minutes while the grill is heating up.
Place the country ribs on the grill away from the heat source. Cook for about 2 hours then spray with cooking oil then flip the ribs over. Smoke for 2 more hours.
Transfer the pork ribs to a 9x13 aluminum pan and pour in apple juice (optional) cover with foil and continue to cook for 90-120 minutes until the country ribs reach about 200 degrees F. and are tender.
Remove the ribs from the pan and place them back on the grill. Brush with bbq sauce and cook for about 15 minutes until the sauce carmelizes on the ribs.
Notes
Serve with your favorite condiments like sliced jalapenos, pickles, coleslaw and pickled onions. These boneless pork ribs are great for sliders so be sure to serve them with some rolls.
