Football season is here! Today is the first preseason home game here in Baltimore. While no one enjoys paying full price to watch a glorified practice, preseason football is a great chance to fine tune your tailgating skills. About 5 hours before the tailgate my good friend suggested grilled Taylor Pork Roll sandwiches. Here's what we came up with!
A few packs of Taylor Pork Roll
A few sticks of butter
Sharp Cheddar Cheese Slices
This is a pretty easy tailgate so there won't be too many instructions. We sliced the pork roll to approximately 1/4 inch or slightly larger slices. As with frying pork roll in your kitchen make slits on the sides of the pork roll to prevent curling. Usually 3 or 4 slits around the pork roll will suffice. Preheat the charcoal grill to medium high heat and toss the pork roll slices on the grill. Remember, pork roll is already cooked so all you need to do is to warm it up and get that great grill flavor cooked into the meat.
Note: After a few beers I was abruptly slicing the pork roll without thinking.
In the above photo the slits are too far towards the center of the pork roll slice
and in fact some slices broke apart because of this!
After the pork roll is grilled cut your English muffins in half and place them face down on the grill. Not too long or they will burn so keep an eye on them. At the same time put your sliced cheddar cheese on top of the pork roll. Close the lid a bit to help melt that cheese.
When the English muffins are grilled, flip them over and butter them!
Assemble the sandwich and enjoy!!
