Ok, so I'll be honest. There's no grilling in this post. But, and this is a big but, this was my first time making my own sausage!! I really want to master the art of making all sorts of sausages and I decided to start easy with breakfast sausage. Why? Well, because I knew I could make a breakfast patty without worrying about casings and all that fancy stuff. So I found a good recipe for breakfast sausage and then took out all my frozen baby back rib trimmings and ground the meat and added some spices. Here's what I did:
Breakfast Sausage From Leftover Rib Trimmings

Ingredients:
Leftover rib trimmings (or about 1 lb of ground pork if you don't want to grind it yourself)
1 tsp sage
1 tsp black pepper
1 tsp salt
⅛ tsp marjoram
2 tsp brown sugar
1 tsp red pepper flakes
I apologize for not taking any photos of the grinding process but I was having so much fun with my Kitchen Aid Stand Mixer Grinding attachment that I didn't want to mess with the camera.
When I smoke baby back ribs I always trim them up significantly. I do not like really thick meaty baby back ribs because I find that they do not cook evenly. So I go to town on them by cutting off most of the top loin meat right down to the bone. This results in me having a huge bag of leftover rib meat in the freezer! I ground all the meat and made fresh ground pork. Then I added the above ingredients and mixed by hand. Next I formed sausage patties. I pan fried the sausage patties until they were cooked through. Here are some pictures of my breakfast extravaganza utilizing the homemade sausages! The sausage had a really nice flavor; I'm thrilled with this recipe.


You have to have bacon for a good breakfast, even if you also have sausage!
