Simple and basic is what this recipe is about. The amazing flavor of grilled chicken sometimes goes unnoticed because of all the crazy rubs and sauces we tend to slather all over. To make grilling them easy I set up the grill for two-zone grilling: direct heat area and indirect heat area. I start the wings on the indirect side until they are mostly cooked and then finish them by charring over the direct heat.

Meat: 1 lb of chicken wings.

Seasoning: 2 tsp of kosher salt, and 2 tsp coarse ground black pepper.

For coating: 1 tbsp of avocado oil.

How to Make Salt and Pepper Grilled Chicken Wings

Heat Grill. Set up the grill for dual zone cooking with all the coals on one side. Aim for a target temperature of 375-400 degrees F.

Season and cook. In a large bowl toss wings with avocado oil, kosher salt, and pepper. Place wings on the grill opposite the coals and cook for 30-40 minutes. Spray with cooking oil then cook for another 10-15 minutes until wings reach an internal temp of around 190 degrees F.

Make them crispy. To crisp up the wings even more place them on the hot side of the grill for 30-45 seconds just long enough to crisp the skin before removing from the heat.

Serve and enjoy. Serve dry or with your favorite dipping sauce.

Storing Leftovers

If you are looking for long-term storage, freezing your leftover is best.

However, if you are looking to indulge in the next 3-4 days storing them in an airtight container in the fridge would be your best option.

Reheating Leftover Salt and Pepper Chicken Wings

To reheat your leftover chicken wings, preheat the oven to 350 degrees.

Spread out your wings on a baking sheet in a single spread-out layer. Place the wings in the oven and cook/reheat for 10-20 minutes.

Is it better to grill with the lid open?

Truthfully, it is all about personal preference. When you grill with the lid open, you get a more precise cook when it comes to the heat of the grill top and the food.

However, when grilling with the lid closed, you have all the same heat acting on the bottom of the food, but more as the heat surrounds the food resulting in mixed cooking results.

Should I season the salt and pepper chicken wings before grilling?

Yes, however, you need to be careful. The skin on chicken wings can burn easily so you don’t want to overdo it too much and add to that chance.

Lightly season with salt, pepper, or any other seasoning if you want and cook. If you are adding sauce, brush it on right before the chicken is done to ensure it doesn’t burn.
