Why This Recipe Is The Best

  • Flavor: when I tell you that these beans are loaded with flavor I and still not doing them justice. I guarantee you don't need to add a drop of anything, just follow the recipe.
  • Easy: All you really need to do is sauté some bacon with onions and jalapeños toss in the remaining ingredients and put the skillet on the pellet grill to smoke. Give its the occasional stir and they are done.
  • Cheap: All of these ingredients can be found at your local grocery store. Nothing fancy. You probable have ¾ of the ingredients in your pantry already.
  • Feeds A Crowd: You can make this batch for 6 people or 36 people with about the same amount of effort so its perfect when you need to make a larger batch.
  • Stays Warm: Because the skillet is hot and the beans are simmered in a sauce this will stay hot on the counter for an hour or more.

Ingredients

  • Baked Beans: Use whatever your favorite can is I like to buy the bigger 28oz cans so you don't have to open as many and I look for one that doest have a ton of extra sugar because we are adding out own sweetness.
  • Apple Pie Filling: I used a no sugar added again so the final recipe weans overly sweet.
  • Bacon. I prefer a thick cut bacon that I just slice into large chunks and saute. You could also use country ham if you prefer.
  • BBQ Sauce: This is totally up to you. Pick you favorite and go with it.
  • BBQ Dry Rub: Again I try to use something that's balanced and not to sweet.
  • Dry Mustard: This adds a little zip to the beans without getting to spicy.
  • Jalapeno: I always prefer fresh jalapeños. You cause pickled jalapeños or chipotle peppers for an extra smoky flavor.
  • Onion: I think Onion is a very under appreciated ingredient. It adds a lot of flavor to the dish even if you don't see it in the final product.
  • Brown Sugar: Just a ¼ cup of brown sugar to give the recipe some depth.
  • Bourbon: Its not picture above but I do like to deglaze the pan with a shot after cooking the bacon and onions. you can skip this or use chicken stock instead.

Cooking Instructions

  • Prep: Slice you bacon, chop the onions and jalapeños and preheat the smoker to 300 degrees F.
  • Cooking: Sauté the bacon until it's almost crispy then add in the jalapeños, onions and spices. Continue to cook until the onions are softened then deglaze with a shot of bourbon or chicken stock.
  • Add ins: Add the remaining ingredients including the beans, apple pie filling and bbq sauce and stir to combine everything.
  • Smoke: Place the Beans on the pellet grill. and cook for about 90 minutes to two hours. Stir the beans after an hour to incorporate the smoke throughout the dish.
  • Serve: You can serve the bbq beans right away. If you need to keep them for a while before serving. cover with foil then wrap in an old towel until ready to eat.
