How to Make Southern Squash Casserole
INGREDIENTS
- 5 Cups Yellow Squash Sliced into ¼ inch Half Moons
- 2 Eggs
- ¼ cup Dukes Mayonaise
- 1 cup Mild Cheddar Cheese Shredded
- ½ cup Milk
- ¼ cup Butter Melted
- ¼ cup Scallions Sliced
- 35 Ritz Crackers 1 Sleeve
- 1 tsp BBQ Dry Rub
INSTRUCTIONS
- Preheat the oven to 400 Degrees F.
- Place sliced yellow squash and the white parts of the scallions (save the green for garnish) in the skillet spray with cooking oil and season with bbq dry rub, toss the squash so evenly coated with seasoning and roast for 25-30 minutes until squash is slightly tender.
- Drain off excess liquid in the skillet and let cool for 5 minutes. Blend together Eggs, Milk, Mayo, Melted Butter, ½ cup cheddar cheese and ½ a sleeve of crushed ritz crackers. Tmixture doesnt need to be pureed it can still have some texture and a few lumps.
- Pour Mixture over the squash and stir mixture so its evenly coated. Wipe down the sides of the skillet so the sauce doesnt burn. Top with remaining crushed Ritz Cracker and Shredded cheddar. Spray with cooking oil then Bake for 25-30 Minutes until golden brown and bubbly.
- Garnish with sliced green scallions and a pinch of bbq dry rub.
Is Squash Casserole Keto?
The recipe in its current form has 8 carbs in it which is fairly low but to make it keto friendly replace the ritz crackers with crushed pork rinds. That will drop the carb count to below 3 grams per serving.
Adding bacon to this squash casserole and using pork rinds can transform this side dish into a keto friendly main course.

- If the squash is soft in the center scoop out the seeds so the casserole doesn't end up watery.
