Is Squash Casserole Keto?

The recipe in its current form has 8 carbs in it which is fairly low but to make it keto friendly replace the ritz crackers with crushed pork rinds. That will drop the carb count to below 3 grams per serving.

Adding bacon to this squash casserole and using pork rinds can transform this side dish into a keto friendly main course.

Tips for Making Southern Squash Casserole

  • If the squash is soft in the center scoop out the seeds so the casserole doesn’t end up watery.
  • Let the casserole rest for 5 minutes before serving. The casserole will be much easier to serve.
  • Top with Crispy Onions for added texture and flavor
  • Sauté a few strips of bacon before roasting the squash, This recipe is vegetarian but we all know bacon would make this yellow squash casserole even better.
  • If yellow squash isn’t your thing you can substitute zucchini in this recipe using the same ingredients and cooking instructions
