Steak Fries are the king of all fries because of their massive size compared to those skimpy shoe strings from the local fast food restaurant.
This recipe will show you how to take russet potatoes and turn them into steak fries that you would find at a high end steakhouse but at home using your air fryer.

Air Fryer Steak Fries Recipe
Ingredient List
- Russet Potatoes about 2 pounds
- Avocado Oil
- Cornstarch
- Kosher Salt
- Coarse Black Pepper
- Granulated Onion
- Granulated Garlic
- Dry Thyme

Instructions
- Combine seasoning blend by mixing together, salt, pepper, onion, garlic and thyme. Combine seasoning blend with cornstarch and set aside.
- Cut potatoes into wedges so that you get 6-8 wedges from each potato. Wash the wedges under cold water, drain and pat dry with paper towel.
- Once the potatoes are dry place the wedges in a large bowl and coat with avocado oil. Next toss the potato wedges in seasoned cornstarch mix so that the potatoes are coated on all sides.
- Place the wedges in the air fryer and cook at 375 for about 20 minutes. let the fries cool for at least 30 minutes or refrigerate for a few hours.
- Cook the fries a second time at 400 degrees F. for 25-30 minutes flipping the fries half way through the second cook.
- Fries are done once they have reached the color youre happy with. If you like them super crispy just keep cooking a few extra minutes.

Cooking Tips and Variations
Storage: you can prep these potatoes ahead of time by cooking them for 20 minutes and then refrigerating until you're ready to make them. They will last for about 4 days in the fridge but they're best if consumed within 48 hrs.
Conventional Oven: No Air Fryer, No Problem. You can use your conventional oven and make this same recipe. Lay the potatoes out on a sheet pan and follow the same directions.
Seasoning: You can use any seasoning blend you'd like if you don't want to use the spice blend in this recipe. I recommend avoiding soft herbs like parsley oregano and basil because they burn easily. Also avoid seasoning with high sugar content.
Quick Version: The secret to the crispiest potatoes is to cook them twice but I know thats not always an option. You can skip the 30 minute cool down and just go straight into the high temp cook. The potatoes will still turn out great just slightly less crispy than if you let them cool down.

To me there is very little if no difference. Steak fries seem to be cut slightly flat on the side instead of coming out to a point as wedges do. Truly you're splitting hairs though. Both are delicious and tasty and thats all that matters.
Yes, Sweet potatoes won't be as crispy and may take a few extra minutes but you can follow this recipe slightly modified.
Unfortunately potatoes are a pretty high carb food. I recommend jicama fries or rutabaga Fries as a lower carb alternative.
