Can anything be wrapped in bacon and stuffed with cheese? Yes, of course! This is probably the easiest thing that you can grill that still falls into the "over the top" category. It's as simple as grabbing a pack of hotdogs, some sharp cheddar cheese sticks, and bacon. Check this out - these are the perfect snack for a tailgate. No need for a bun, either. A finger food at its finest!
Today I went with Ballpark's new hotdog line called "Ballpark's finest." It's a nice hotdog that has no preservatives or nitrates. I wish these were around when Mrs. Grilling24x7 was pregnant. As you may know, nitrates are a no no for pregnant ladies, which means they can't have hot dogs. Ah! Problem now solved. Anyway, sharp cheddar cheese sticks are my favorite as well as some nice thick quality bacon. So grab some of each.
Simply make a cut down your hotdog. Be careful not to go all the way through, just enough to create a pocket for the cheese stick to reside.
Place the cheese stick inside and then wrap with bacon. I don't bother with securing via toothpick, that's a pain. Just wrap it tight and try to tuck a small end piece of bacon back under itself to keep it secure. If you can't, don't worry about it, as once the bacon starts to cook it will take shape.
The only trick to grilling these is to use a medium indirect heat. Prepare the grill using medium indirect heat. This means have charcoal only on one side of the grill. The other side will be where you cook your hotdogs. Line the bacon cheddar stuffed dogs on the indirect side of the grill (away from the heat) and close the grill dome. This will cook the hotdog, melt the cheese and cook the bacon at approximately the same time. Once the cheese is oozing and the hotdogs are cooked, quickly and carefully roll the dogs over direct heat. Things will get exciting and flame up on you from the bacon grease. That's ok, the point now is to crisp up the bacon a bit and give them some color. Stand by with your tongs and give each one about 20 seconds over the direct heat.
For a Bacon Wrapped Cheddar Stuffed Hotdogs tailgate, I'll make a bunch of these and serve them out of an aluminum tin. No need for a hotdog bun, just grab one and enjoy! You can also serve with a spicy mustard if you want to dip them. Also note that any type of cheese can be used. Imagine how good a white cheddar would be!? You can also brush the hot dogs with BBQ sauce or hot sauce while grilling. The possibilities are endless.
